Choose a healthy oil - peanut and canola are good choices.
Make sure oil temp. is hot enough to prevent soaking up too much oil.
Too much flour absorbs more oil. Using cornmeal or rice flour helps reduce absorption. (Dip in flour, then egg or milk, then cornmeal.) Also batters that use leaveners or carbonated beverages help discourage oil absorption as well.
Don't overcrowd the pan.
