Ingredients

  • 1 spaghetti squash (about 3 lb)
  • 1 pkg. (16 oz) frozen broccoli, peppers, onions and mushrooms (like Birdseye)
  • 2 cloves garlic, peeled and chopped
  • 1 jar (16 oz) alfredo sauce
  • 1/4 cup chopped fresh basil

Step 1

Pierce spaghetti squash. In glass pie plate in microwave, cook 15 minutes or until squash feels soft and tender. Let sit 5 minutes or until cool enough to handle. Halve lengthwise, remove seeds. Using fork, scrape out strands.

Meanwhile, in skillet over medium heat, cook vegetables and garlic 7 minutes or until heated through, stirring occasionally. Add alfredo sauce and basil; cook 2 minutes or until heated through.,

Serve sauce and vegetables over cooked spaghetti squash.
