Ingredients

  • 2 Tablespoons Fresh Italian Parsley
  • 1 Lb Maple Bacon cut in half crosswise
  • 2 Lbs Scallops
  • 1/2 Cup Olive Oil
  • 1/2 Dry Vermouth
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1/2 Teaspoon Onion Powder
  • Dash of Dried Oregano Leaves
  • Lemon Peel & Green Lettuce Leaves for Garnish if serving as an appetizer

Preparation

Step 1

1. Chop parsley to make 2 tablespoons.
2. Wrap 1 piece (half piece) bacon around each scallop and secure with a toothpick. Place in a 13 x 9 baking dish.
3. Combine olive oil, vermouth, parsley, garlic powder, onion powder, pepper and oregano in a small bowl, stir well. Pour over scallops.
4. Marinate, covered in the refrigerator for a minimum of 4 hours.
5. Remove scallops from marinade. Arrange on rack of a broiler pan. Broil 4 inches from heat for approx 7 to 10 minutes until bacon is browned and crispy. Turn over, brown other side for 5 minutes more or until scallops are opaque and bacon is cooked.
6. Remove toothpicks.

If using as a appetizer, arrange on green lettuce leaves and garnish with lemon peel strips.
