Ingredients
- 2 1/2 cups cooked, cubed chicken
- 1 medium onion, diced
- Jar of salsa
- 1 pkt. Taco seasoning
- 1/2 cup Bisquick
- 1 cup skim milk
- 2 eggs
- 8 oz. Cheddar or Pepper Jack cheese, grated
- Preheat oven to 400 degrees. Spray 9” pie plate especially around the edges.

Step 1
In small bowl toss chicken with 2/3 cup salsa and spoon into prepared pie plate.
Combine Bisquick, milk, 1 T. taco seasoning and eggs in small bowl until blended, stir in the cheese. Pour over the meat mixture in pie plate. Bake 20-25 minutes or until knife inserted in near center comes out with just a moist crumb or two. Do not overbake. Top should be tender.
Cut into wedges; spoon some of remaining salsa and top with avocado, lettuce shreds or sour cream.
