Ingredients
- 2 large-sized eggplants
- 1/2 cup (130g) tahini (sesame paste)
- 1 1/4 teaspoons coarse salt
- 3 tablespoons freshly-squeezed lemon juice
- 4 cloves garlic, peeled and smashed
- 1/8 teaspoon chile powder
- 1 tablespoon olive oil
- a half bunch picked flat-leaf parsley or cilantro leaves

Step 1
Preheat oven to 400. Wash whole eggplant stem and skin. Poke holes in skin with a fork. Put on cookie sheet and bake for 45 minutes. Let cool, peel off skim and put in blender. Process until smooth. Add other ingredients and process.
