Ingredients

  • 1/2 cup butter
  • 3/4 cup vegetable shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 2 cups corn flakes
  • 1 cup oatmeal
  • 1 1/2 cups flaked coconut (optional)

Step 1

Preheat oven to 350. Cream butter and shortening, gradually add sugars, beating until light. Add eggs and vanilla and beat well. Combine flour, baking soda, baking powder and salt. Stir to mix thoroughly. Add to butter mixture and blend well. Stir in corn flakes, oatmeal and coconut. Mix well. Drop dough by rounded teaspoons about 1 1/2 inches apart on ungreased cookie sheets. Bake 8 to 10 minutes, or until cookies are light golden.
