Ingredients
- 1.5 cup cooked sweet potato
- 1/4 cup coconut flour
- 1 tsp baking soda
- 2 Organic Soy-free Eggs
- 1/4 cup melted Virgin Coconut Oil
- 2 tbsp raw honey or maple syrup (optional)
- 1 tsp cinnamon
- 1 tsp nutmeg

Preparation
Step 1
Turn on oven to 350 degrees.
Mix the dry ingredients together.
Mix wet ingredients in a bowl with a whisk.
Add all ingredients and mix together until well combined.
Put mixture into a small casserole dish or stainless steel loaf pan and bake for 25 minutes or until the middle is set.
These would also make great muffins.
Makes a small loaf about 6-8 slices.
