No-Bake Chocolate Coconut Rolls

Ingredients
- 2 2/3 Cup Shredded Coconut
- 1 3/4 Cups Powdered Sugar
- 1 Cup Semi Sweet Chocolate Chips
- 2/3 Cup Instant Potato Flakes
- 2/3 Cup Water
- 1 Tablespoon Milk
- 1 Tablespoon Butter Or Margarine
- 1/2 Teaspoon Vanilla
- 1/4 Teaspoon Salt

Preparation
Step 1
To make potatoes:
Heat water, milk, butter and salt to boiling.
Remove from heat: Stir in potato flakes, just until moistened. Let stand until liquid is absorbed (about 30 seconds). Whip with fork until desired consistency.
To make chocolate coconut roll:
Blend 1/3 cup prepared potatoes, vanilla and coconut, mix well. Slowly add powdered sugar until mixture is stiff. Shape in a 2-inch roll.
In a small saucepan, melt chocolate chips over medium low heat. Spread melted chocolate over top of roll and put in the refrigerator to chill. Slice.
