Ingredients

  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. Mix chicken, sausage, bell pepper, onions, garlic, oregano, pepper flakes, tomatoes and tomato paste in slow cooker. Cover; cook on Low heat setting 6 to 8 hours.
  • 2 About 25 minutes before serving, cook rice in 2 cups water as directed on package.
  • 3 Just before serving, stir artichoke hearts and olives into chicken mixture. Cover; cook until hot. Serve chicken mixture with rice.

Absolutely delicious...all of my potluck guests raved about it and wanted the recipe. And so easy...I used Italian seasoning instead of just oregano and did not drain the artichoke quarters but added them with their juices. To make it quicker (didn't have 6-8 hrs. to wait!), I sauteed and partially cooked the chicken and turkey pieces, peppers and onions on the stovetop and then added them all with their juices to the rest of the ingredients in the crock pot and cooked on High for 1-1/2 hours. Blended the flavors of everything perfectly and what a great meal! My husband loved it, too, and made sure we had some leftovers to take home!

I did a version of this last week and added cumin, Moroccan spice and turmeric (deleted the oregano) Served with brown rice - very yummy and made for great leftovers!
