Miniature Goat Cheese Cakes

Ingredients
- 1 Tbs unsalted butter, melted plus extra for butttering the tin
- 1/2 cup fresh bread crumbs
- 1/2 cup very finely chopped toasted walnuts
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 5 oz fresh goat cheese, softened
- 1/4 pound cream cheese, softened
- 1 large egg, lightly beaten
- 1 tbs snipped fresh chives

Step 1
1. Preheat ovento 350. Butter a nonstick mini muffin tin with eighteen 1/8-cup wells. Mix the bread crumbs, walnuts and butterin a small bowl with half the salt and pepper. Stir with a fork until thoroughly combined. Place 2 tsps of the mixture in each cup and press down into bottom to form a crust
2.Beat the goat cheese and cream cheese in the bowl of an electric mixer until smooth, light and fluffy. Beat in egg, chives and remaining salt and pepper..Divide between wells and smooth tops with a knife.Bake until puffed, about 15 minutes, then run a knife around the rim of each cake and carefully unmold
Note: Can be baked a day ahead, keep covered and chilled in the refrigerator. Rehaet in oven at 350 oven until hot
