Ingredients

  • 2 c. minus 2 T. cake flour (8.5 oz)
  • 1 2/3 c. bread flour (8.5 oz)
  • 1 1/4 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. course salt, such as kosher
  • 2 1/2 sticks unsalted butter (1 1/4 c.; 10 oz), softened
  • 1 1/4 c. (10 oz) light brown sugar
  • 1 c. plus 2 T. (8 oz.) granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 1/4 lbs. bittersweet chocolate

Step 1

Combine flours, baking soda, baking powder, and salt in a bowl.

Cream butter and sugars about 3-5 minutes. Add eggs, one at a time. Mix in vanilla. Add dry ingredients. Add chocolate chips. Refrigerate 24-36 hours.

Preheat oven to 350. Line tray with parchment paper using a 1/3 c. Scoop dough onto baking sheet. Sprinkle with sea salt. Bake 15-20 minutes until golden brown.

(Can make cake flour by mixing 1 c. minus 2 T flour with 2 T cornstarch)
