Ingredients

  • Marinade:
  • 1 1/2 lb pork tenderloin or sirloin steak, thinly sliced
  • 1/2 tablespoons chili powder and crushed red pepper
  • 1 1/2 tsp.ground cumin and seasoned salt
  • 1 teaspoon oregano
  • 2 Tbsp. each vegetable oil and lime juice
  • 1 clove garlic minced
  • 1/2 green pepper, sliced
  • 1/2 red and yellow pepper, sliced
  • 1/2 onion, sliced
  • 4 warm flour tortillas
  • 4 tablespoons salsa
  • Sour cream and guacamole to serve

Toss the pork pieces in a bowl with the and cover with marinade. Let marinate for 2 hours or overnight in refrigerator.

In a nonstick skillet over a medium high heat, stir fry, green bell pepper and onion until everything is tender. Remove from pan and saute meat until tender, about four minutes. Toss with vegetables; spoon into flour torillas.

Spread salsa on each tortilla, fill them with pork, onion and green pepper and roll them up.

Serve with sour cream and guacamole so people can help themselves.
