  • 2 chicken breasts
  • 2 cups chicken broth
  • 2 cups water
  • 3 carrots, peeled, sliced lengthwise and cut in chunks
  • 3 potatoes, peeled, and quartered
  • 1 medium onion, peeled and cut in chunks
  • 2 celery stalks, cut up

Step 1

Cook chicken breasts. Cool. Remove skin and bones and break apart into,small pieces. Set aside. In a saucepan, add,chicken broth and water. Add vegetables and cook over medium heat, covered, until tender.,then add chicken. Reduce heat to,simmer and simmer gently about 1 hour or until cooked through and add freshly ground pepper and basil.
