Ingredients

  • Hot Water Pastry:
  • 2-1/2 cups all purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • Filling:
  • 1 lb. pork, finely ground
  • 1/2 teaspoon salt
  • Pinch white pepper
  • 3 tablespoons light soy sauce
  • 1/2 teaspoon sesame oil
  • 2 green onions, finely chopped
  • 3-4 tablespoons oil, for frying
  • Dipping Sauce:
  • 3 tablespoons vegetable oil
  • 1 tablespoon light soy sauce
  • 3 tablespoons white vinegar
  • 1 teaspoon sugar

Step 1

Sift flour into a bowl. Stir in boiling water with a knife, adding a little cold water if necessary or take up any excess flour. when cool, knead on lightly floured board until smooth. Cover with a bowl and let rest 30 minutes.

Combine pork, salt, pepper, soy sauce, sesame oil and green onions. Chill 30 minutes.

Roll out dough with hands to form a sausage shaped roll. Cut into 20 even portions. Lightly roll each portion into a ball. Roll out each ball into a 4 inch circle, with the edge thinner than the center. The dough circles can be stacked with a piece of wax paper between each. Cover with a bowl to prevent drying out.

Divide pork mixture into 20 portions. Place one in center of each piece of dough. Bring the edges together to cover filling. Twist them slightly and pinch to seal. Place seal side down onto board and reshape into a round pastry. These may be made in advance and refrigerated.

Heat oil in a flat-bottomed pan. Reduce heat and fry patties 4 minutes on each side until brown. serve hot with dipping sauce.

Sauce:

Warm oil in a saucepan, stir in soy sauce, vinegar and sugar to dissolve. Cool and serve in a small bowl.
