Chicken Cutlets with Apple and Onion 0 Picture

Ingredients

  • 2 tsp oo
  • 1 onion, sliced into 1/4 inch rings
  • 1 fuji or gala apple, peeled and cut into 1/4 inch slices
  • 4 (1/2 lb) chicken cutlets
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp ground coriander
  • 3 Tbsp Dijon

Preparation

Step 1

1) Heat oil in medium skillet over medium-high heat. Add onion and cook, stirring frequently, until golden, about 10 minutes. Add cider; reduce the heat and simmer 3 minutes. Add the apple and cook, stirring occasionally until tender, about 5 minutes
2) Sprinkle chicken with s&p and coriander; brush both sides with mustard
3) spray ridged grill pan and set over medium-high heat. Add chicken and cook until cooked through, about 5 min per side. Serve topped with apple mixture


can serve with carrot salad: 4 cup shredded carrots, juice of 1/2 lemon, 2 Tbsp chopped cilantro, 2 Tbsp OO, s&p
