SOUTHERN SQUASH CASSEROLE 1 Picture

Ingredients

  • 3 small summer squash
  • 1 medium onion, chopped
  • 2 TBS butter
  • 2 whole eggs
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • salt and pepper, to taste
  • melted butter
  • Panko bread crumbs

Preparation

Step 1

Slice squash 1/2" thick. Chop onion. Saute in butter for 15 to 20 minutes or until cooked through. Remove from heat.

Beat eggs. Add mayonnaise and cheese. Mix well. Stir mixture into squash. Add salt and pepper. Place in greased casserole dish.

Mix bread crumbs and melted butter. Sprinkle over top of the squash in the casserole dish.

Bake at 350F for 30 minutes.
