Mush together purchased ice cream, lemon curd & limoncello and you get a delicious lemony version of a Creamsicle. Meringue cookies add crunch.

Ingredients

1/4 c lemon curd
2 1/2 T limoncello
2 c vanilla low-fat ice cream
12 mini vanilla meringue cookies

Preparation

Step 1

Combine curd & liqeuer in small bowl, stirring with a whisk to blend.
Add ice cream to curd mixture.
Stir gently to swirl.
Spoon 1/2 c ice-cream mixture into each of 4 bowls; top each with 3 meringue cookies
