Ingredients
- 1 tbsp. canola oil
- 1 each onion, carrot, and stalk celery, chopped
- 1/2 red or green pepper, chopped
- 1 1/2 c. chicken broth
- 1 1/2 c. Minute Rice, uncooked
- 1 c. frozen peas

Preparation
Step 1
Heat oil in skillet. Add onion, carrot, celery and pepper; cook 5 minutes or until tender.
Add broth; bring to boil.
Stir in rice and peas; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes before serving.
