Ingredients

  • 2 tablespoons (2 envelopes) unflavored gelatin powder
  • 1/2 cup cold water
  • 1 cup boiling water
  • 3/4 cup sugar
  • 3/4 cup freshly squeezed or bottled lemon juice
  • 1 cup plain yogurt
  • 4 drops yellow food coloring (optional)
  • 1 teaspoon poppy seeds

Step 1

In a bowl, sprinkle the gelatin evenly over the cold water and allow the gelatin to absorb the water for 2 minutes. Add the boiling water and stir until the gelatin is fully dissolved. Add the sugar and stir until fully dissolved.

In a separate bowl, whisk the lemon juice and yogurt together until the mixture is smooth. Whisk the yogurt mixture into the gelatin mixture. Blend in the yellow food coloring, stirring until a uniform color. Refrigerate until thickened. Fold in the poppy seeds and spoon into a 4-cup mold. Refrigerate until firm. Unmold and serve.
