RAVIOLI WITH Broccoli Rabe CREAM SAUCE

Ingredients
- 3 tbsp. olive oil
- 1 sm. onion, chopped
- 1 tbsp. flour
- 4 oz. chicken broth
- Salt and pepper
- 4 tbsp. grated Romano cheese
- 1 tbsp. butter
- 4 oz. diced wild mushrooms
- 2 bunches broccoli rabe, tough lower stems removed You may use turnip greens or mustard greens.
- 4 ounces diced bacon or sausage sliced
- 4 oz. heavy cream
- 4 oz. white wine
- Pinch of nutmeg
- Chopped parsley
- 1 pkg. ravioli

Step 1
In a large pan, heat oil and butter. Saute onion and bacon and mushrooms. While sauteing place sausage in large pot of water. In onion mixture stir in the flour and add remaining ingredients except the cheese and parsley. Simmer 8-10 minutes over medium heat.
In the large pot of well-salted water. (Set a bowl of well-salted ice water on the counter.) Add the broccoli rabe and cook for 1 minute, remove the broccoli rabe from the boiling water and plunge it immediately into the salted ice water. Reserve the boiling water to cook the pasta. Once the broccoli rabe has cooled, remove it from the ice water and squeeze out any excess water. Finely chop the broccoli rabe (the food processor works really well here) and Cook ravioli according to package directions, drain. At the last minute add the Broccoli Rabe to the sauce and Toss, add cheese and parsley.
