Ingredients
- Peanut Dipping Sauce:
- 6 boneless, skinless chicken thighs
- 4 cups ice water
- 4 teaspoons kosher salt or 2 teaspoons other salt
- 2 tablespoons yellow onions, finely chopped
- 2 tablespoons fresh cilantro, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons peanut butter, melted in microwave
- 2 teaspoons light brown sugar
- 1 teaspoon hot sauce
- 1 tablespoon tomato paste
- 2 tablespoons chicken stock
- 2 tablespoons hoisin sauce
- 2 tablespoons peanuts, chopped

Step 1
Cut each chicken thigh into 1-inch cubes and place in a mixing bowl.
Add the ice water and salt to the bowl; stir to dissolve the salt.
Let rest for 15 minutes then transfer chicken to steamer baskets.
Fill water tank with water.
Cover steamer and set timer to 5 minutes.
Steam for 5 miutes or until internal temperature registers 165 degrees on a meat thermometer.
Remove then toss with the onions and cilantro in a bowl.
In a separate bowl, combine all dipping sauce ingredients; stir.
Serve chicken with dipping sauce.
