Ingredients

  • 4 Large eggs
  • 8 oz unsalted butter, softened
  • 6 oz soft dark brown sugar
  • 2 oz golden syrup
  • 2 oz dark chocolate, melted
  • 1 teaspoon vanilla extract
  • 7 oz self-raising flour
  • 1 oz cocoa
  • 1/2 level teaspoon baking powder
  • 1 tablespoon water
  • 1/2 pint soured cream or crème fraiche
  • 14 oz dark chocolate, melted
  • 8 in round cake pans, buttered and base lined

Step 1

Set oven to 350 degrees.

To make sponge, put eggs, butter, brown sugar, golden syrup, melted chocolate and vanilla extract into large bowl. Sift in flour, cocoa and baking powder and add water. Beat with hand-held electric mixer until smooth.

Divide mixture between two tins and smooth tops level. Bake in center of oven for 25-30 minutes, until cakes feel springy to touch. Remove cakes from oven and leave them to cool in tins for few minutes before turning them onto wire rack to cool completely.

To make frosting, stir soured cream or crème fraiche into melted chocolate using wire whisk. Allow mixture to cool slightly but not to set.

Place one layer of sponge on plate and spread generous layer of frosting over it and then place other sponge on top. Cover cake completely with remaining chocolate frosting, swirling it on.

Leave cake in cool place for frosting to set little before serving.
