Ingredients
- 1 cup plain Greek yogurt
- 3 green onions, sliced (or 1 T sweet onion, minced)
- 1 T fresh mint, finely chopped
- 2 t fresh tarragon, finely chopped
- 1/2 t dill, dried (or 1/2 T fresh)
- 2 t ground garlic
- 1 T extra virgin olive oil
- 1 1/2 T lemon juice, fresh squeezed
- Optional: Salt, pepper, and hot red pepper flakes to taste

Preparation
Step 1
Slice the onion and herbs. Squeeze the lemon. If the lemon is hard, microwave it for 20 seconds and then roll it firmly on the counter before slicing in half. Measure the rest of the ingredients.
Place everything in a small bowl. Stir well and chill in the refrigerator for two hours.
Delicious with falafels, lamb, chicken, or fish
