  • Two 2-lb. slabs baby back pork ribs
  • 1 medium yellow onion
  • 2 Tbls. Galena Street Rib Rub
  • Texas style BBQ sauce (the smoky, thick, dark, rich kind) - Trader Joe's is good
  • 1 Tbls. whiskey

Step 1

Preheat oven to 300F. Slice onion into thick slices and layer on the bottom of a shallow roasting pan. Spray with Pam. Cut each rack in half, so you have 4 half-racks. Spray with Pam and sprinkle rib rub over ribs. Cover with heavy foil and roast for 2-1/2 hours.

Preheat outdoor grill. Remove ribs from oven and let stand 10 mins. Place ribs on grill and cook 3-4 mins on each side. Mix whiskey and sauce in a small bowl. Brush on ribs the last few minutes of grilling. Brushing on too early will cause the sauce to burn on the grill.
