Ingredients
- 4 slices thick-sliced bacon, diced4 slices

Preparation
Step 1
4 slices thick-sliced bacon, diced4 slices
3⁄4 cup diced red bell pepper3⁄4 cup

Kosher salt and black pepper to taste
1⁄2 cup thinly sliced scallions1⁄2 cup
Sauté bacon in a large sauté pan over medium heat until crisp. Pour off all but 1 Tbsp. drippings. Add bell pepper and onion to sauté pan; cook until nearly soft, about 5 minutes.
Deglaze pan with sherry until liquid is nearly evaporated, scraping up bits from the bottom of the pan. Stir in corn, cream, and Tabasco. Simmer until mixture thickens, 3–4 minutes. Season salad with salt and pepper, then stir in scallions. Serve salad with Bourbon-Glazed Pork Kebabs.
