Ingredients

  • 1-1 1/2 lb sirloin steak, cut into cubes
  • 1 large fresh green chile
  • 1 med red onion
  • 10-12 mushrooms
  • 4-6 med russet potatoes (sub whatever you have)
  • 4-6 large carrots
  • 1 can beef consumme
  • water

Preparation

Step 1

Brown meat, onions, mushrooms, and chile in oil on high heat (work in batches) till almost burnt

Add beef broth and one can of water

Add 4 cups of water over 20-30 minutes cooking on med-high

Add potatoes, carrots and enough liquid to cover at about 45 min. Cook for an additional 35 min.

Serve with sour cream and biscuits.
