Ingredients

  • 1/2 lb jack cheese
  • 1/2 lb cheddar cheese
  • 1 onion, chopped fine
  • 1 can chopped olives
  • 1 small can diced green chiles
  • 1 large can Las Palmas Red Sauce
  • 1 small can Las Palmas green sauce
  • 1 1/2 dozen corn tortillas

Preparation

Step 1

Heat oil in small pan

Heat red and green enchilada sauces

Dip tortillas in oil until pliable and then into sauce. Set aside on a plate

Fill each tortilla with cheese, onions, chiles and olives and roll.

Ladle some sauce into the tray that you will be cooking the enchiladas in

Place seam side down into pan close together. I like to sometimes do 2 layers.

Pour more sauce on top of rolled enchiladas and cover with remaining toppings.

Bake uncovered at 375 for 30-40 min

Let stand 5-10 min before serving.
