Ingredients

  • 2 t. salt
  • 1 t. paprika
  • 1/2 t. onion powder
  • 1/2 t. dried thyme
  • 1/2 t. white pepper
  • 1/4 t. cayenne pepper
  • 1/4 t. black pepper
  • 1/4 t. garlic powder
  • 1 onion, quartered
  • 2 lb. whole chicken

Step 1

Mix seasonings together in small bowl. Rinse chicken cavity and pat dry. Rub each chicken inside and out with spice mixture. Place onion in the cavity of the chicken. Place chicken in a resealable bag; refrigerate overnight or at least 4-6 hours.

Preheat oven to 250 degrees. Place chicken in roasting pan. Bake uncovered for 5 hours. Let chicken stand for 10 minutes before carving.
