Ingredients
- 1/4 cup clarified butter
- 1 quart brussels sprouts, washed
- Salt and pepper to taste
- 1 teaspoon freshly chopped garlic
- 1 cup white wine (divided)

Preparation
Step 1
In a large sauté pan, combine butter, sprouts, salt and pepper over high heat. Sauté sprouts until browning begins and it feels as if the sprouts are sticking and it should be difficult to flip them in the pan.
Add garlic and sauté briefly, then add ¼ cup of the wine. The sprouts should loosen up dramatically. Cook off the wine to begin sautéing and browning the sprouts again.
Repeat the deglazing and cooking off process using the remaining wine (¼ cup at a time), until wine is gone and sprouts are caramelized and soft.
