Ingredients

  • 3 tbsp butter
  • 1/3 cup sugar
  • 2 egg yolks
  • 2/3 cup sifted flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1/4 tsp vanilla

Preparation

Step 1

Cream butter and sugar, beat in egg yolks. Add sifted dry ingredients. alternately with the milk and vanilla. Pour into a greased 8" pan. Bake at 350 for 18-20 minutes.

TOPPING:
2 egg whites
6 tbsp sugar
1/4 tsp salt
1 cup fresh blueberries

Beat egg whites until peaked. Beat in sugar and salt. Fold blueberries into the meringue and spread over the cake portion. Return to oven at 300 for 12-15 minutes, or until slightly browned.
