  • Coffee or Mocha Glaze:
  • 2/3 cup Margarine
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 2 Tbsp Soy Milk
  • 4 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 4 Tbsp Instant Coffee Granules
  • 2 cup Confectioner's Sugar
  • 2 Tbsp Instant Coffee Granules
  • 3 Tbsp Hot Water
  • 1 Tbsp Vanilla Extract
  • 1-2 Tbsp Cocoa Powder

Preparation

Step 1

Preheat oven to 350. Cream margarine and sugars. Add eggs and vanilla and beat. Add soy milk. Combine remaining ingredients and add.Mix until smooth.
Press firmly and evenly into lightly sprayed 9x13 and bake for 30 minutes covered, then 15 minutes uncovered. Allow to cool.

Dissolve coffee in hot water. Combine remaining ingredients. Add soy milk if too thick. reserve a little glaze. Spread evenly over cooled cake. Add cocoa to reserved glaze and drizzle.
