Ingredients
- 1/2 cup jasmine rice
- 2 cups water
- 1 cup lite coconut milk
- 1/4 cup sugar
- 1/4 tsp. nutmeg

Preparation
Step 1
In medium saucepan, combine the jasmine rice and water, bring to a boil. Cover and simmer over low heat until rice is tender, about 25 minutes. Add 1 cup coconut milk and sugar, simmer, stirring occasionally until the rice is thickened, about an hour. Stir in nutmeg.
Serve with roasted pineapple.
