Preparation

Step 1

1

1 small Red Onion (minced)
2 Garlic Cloves (minced)
1 Lemon (zest & juice)
3 tablespoons Balsamic Vinegar
1/4 cup Olive Oil
Salt
Freshly Cracked Black Pepper
2 pounds large Shrimp (peeled & cleaned; tail on)

Mix together the Marinade ingredients in a zip-top bag or baking dish then add the Shrimp. Allow the Shrimp to Marinade for 20-30 minutes in the fridge.

2

Remove Shrimp from Marinade and skewer onto soaked wooden skewers.

3

Preheat grill.

4

Place Shrimp on the grill and cook for 2 minutes per side or until cooked through but not tough.

5

Remove from skewer and serve with your favorite side dish. Drizzle with more Balsamic Vinegar if desired.

Helpful Tips:
1. Let the shrimp marinade for 20 minutes.
2. Don’t let the shrimp over marinate, or the acid will start to cook it.
3. The ratio of oil to vinegar should be almost 50/50, slightly more oil than vinegar.
4. Let cook for 2-3 minutes on each side. Overcooking the shrimp will make it too tough.
