This Dutch Apple Pie is a family favorite! The crust is the best part- it tastes like a buttery oatmeal/brown sugar cookie. It doesn't get any better than that!

Ingredients
- Filling:
- 2 cups all-purpose flour
- 1 cup light brown sugar, packed
- 3/4 cup butter, melted
- 1/2 cup oats (I used quick oats)
- 2/3 cup white sugar
- 3 tablespoons cornstarch
- 1 1/4 cups cold water
- 3 cups apples, diced and peeled (I use Granny Smith or Golden Delicious apples)
- 1 1/2 teaspoons vanilla extract

Preheat oven to 350 degrees.
In a large mixing bowl, combine flour, brown sugar, butter, and oats. Measure out 1 cup of the mixture and set aside for later; press remaining crumb mixture into a 9” ungreased pie pan. Set pan aside.
In a large saucepan over medium high heat, mix together the sugar, cornstarch and water until smooth. Bring to a boil and let boil for 2 minutes (or until mixture is thickened), stirring the entire time. Remove saucepan from heat and stir in the diced apples and vanilla.
Dump covered apples into the pie pan and top with the 1 cup of reserved crumb mixture. Place in oven and cook for 40-45 minutes (the crust will be a golden brown when it’s done). Let cool before serving.
