Ingredients

  • 6 cups diced potatoes
  • 1 cup celery, diced
  • 1/2 cup sour pickles, diced
  • 1 medium onion, chopped
  • 12 slices bacon, halved
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp vinegar
  • 2 tbsp water

Preparation

Step 1

Cook potatoes until just tender (10 minutes). Drain. Stir in celery, pickles and onion. Cover and keep warm.

Sautee bacon until crisp in medium frying pan. Remove and drain. Crumble 12 pieces of bacon and add to potato mixture. Use remaining pieces for garnish. Drain off all drippings except 2 tablespoons. Stir in brown sugar, salt, pepper, vinegar and water. Heat, stirring constantly until boiling. Pour over potato mixture; toss lightly until dressing is absorbed. Garnish with remaining bacon. Serve warm.
