Ingredients
- 1/2 lb fresh pork
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 1/2 lb smoked ham
- 6 small smoked pork sausages
- 2 T butter
- 1 bay leaf
- 1 sprig parsley
- 1/4 t leaf thyme
- 1 whole clove
- 1 1/2 qts beef or chicken broth
- 1/2 t Tabasco
- 3/4 t salt
- 1 c uncooked rice

Preparation
Step 1
Cut pork into cubes about 1/2 in square; chop onion and garlic very fine. Dice ham; cut sausage into pieces.
Melt butter in Dutch oven; add onion, garlic, pork and ham. Brown slowly, stirring frequently. Add sausage, bay leaf, parsley, thyme and clove; cook about 5 min. Add broth, tobasco, and salt; bring to boil. Add washed rice; cover and simmer 1/2 hour or longer until rice is done. Season to taste.
