Ingredients

  • 1 2/3 cup (1 can) of evaporated milk
  • 1 cup water
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. nutmeg
  • 1 1/2 tsp. vanilla
  • 2 cups of cooked rice
  • 3/4 cup of Angel Flake coconut

Preparation

Step 1

Beat together first 7 ingredients.

Add rice an coconut (raisins if desired), and place in 2-quart baking dish.

Place dish in pan of water in a 350 degree oven for 30 minutes. Stir and bake 30 minutes longer.

Alternate: Microwave pudding in baking dish at 50% power for app.
15-17 minutes, turning often in microwaves without turn tables.
