- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold, unsalted butter
- 3/4 cup heavy cream
- 2 cups fresh fruit

Step 1
Preheat your oven to 375 and place rack in the center. In a large bowl, stir together the flour, sugar, baking powder and salt until evenly blended. Using a fork or pastry blender, cut the butter into the flour mixture until it looks like coarse crumbs. Add the cream and stir until the dough starts to come together. Sprinkle a work surface with flour and turn out dough. Roll with rolling pin until it's about 1 inch thick. Use a biscuit cutter to cut out rounds. Move the dough rounds to a cookie sheet sprayed with cooking spray or lined with parchment paper. Bake until the shortcakes are golden brown on top, about 18-20 minutes. While shortcakes cool, wash and dice your fruit if needed. Whip 1 cup of heavy cream, 1 teaspoon of vanilla and about 1/4 cup sugar. You can cut shortcakes in half if you prefer. Spoon fruit then plenty of whipped cream on top of shortcakes.
