Cream of Broccoli

Ingredients
- 1 Tbsp. olive oil
- 2 tsp. chopped garlic
- 1/2 onion, chopped
- 1 1/2 lbs. broccoli florets
- 1 cup baby carrots
- 1 qt. plus 1 can fat free, reduced sodium chicken broth
- 1/2 cup fat free half and half
- Fresh black pepper

Preparation
Step 1
Heat olive oil in large soup pot over medium heat. Add garlic and onion, sauté until soft, about 3 minutes.
Add broccoli, baby carrots, and chicken broth. Bring to a boil; simmer for 10 minutes until broccoli is soft.
Puree soup in small batches in the blender or food processor, add back to soup pot.
Add fat free half and half to soup. Add pepper and adjust seasoning
May top with 1 Tbsp. parmesan cheese if desired.
