Ingredients
- 2 cups vegetable broth
- 1/2 cups evaporated milk low fat OR milk substitute of choice
- 1/2 medium acorn squash cooked, peeled, seeded
- 1 tsp maple syrup
- pinch of nutmeg
- 1/4 tsp cinnamon
- salt and pepper

Preparation
Step 1
Roast squash in oven for 1 hour.
Place all ingredients into the blender in the order listed and secure lid.
For Vitamix: Select VARIABLE Speed 1. Turn machine on and slowly increase speed to VARIABLE Speed 10/HIGH OR use the Soup Setting. Blend for 6 1/2 minutes or until desired temperature.
For Blendtec: Press SOUP button 2-3x OR HIGH/90 second speed and blend for 5 minutes.
