Cinnamon Streusel Coffee Cake

Ingredients
- Topping:
- 1 c packed light brown sugar
- 1 c all-purpose flour
- 2 t cinnamon
- 1/4 t salt
- 1 stick (1/2 c) cold unsalted butter, cut up
- Cake:
- 2 1/4 c all-purpose flour
- 1 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1/2 c (1 stick) unsalted butter, softened
- 1 c sugar
- 2 eggs
- 1 t vanilla extract
- 1 c buttermilk (or 2 T white vinegar and 3/4 c plus 2 T milk)

Step 1
Heat oven to 350. Line a 9-in square pan with foil; coat with nonstick cooking spray. Preparing topping: In a bowl, blend brown sugar, flour, cinnamon and salt. Work butter into flour mixture with your fingertips until crumbly. Refrigerate while preparing cake batter.
Cake: Combine flour, baking powder, baking soda and salt. Set aside. Beat butter and sugar until smooth, 2-3 mins. Beat in eggs, one at a time. Mix in vanilla.
On low speed, beat in half the flour mixture, the buttermilk and then remaining flour mixture. Spread half the batter into prepared pan. Top with 1 c of the topping, finely crumbling to cover batter. Top with remaining batter, spreading to cover topping. Crumble remaining 2 c topping over batter.
Bake at 350 for 55-65 mins or until toothpick inserted in center comes out clean. Cook in pan on wire rack.
