Ingredients
- 1 medium zucchini, finely diced in 1/4 inch cubes
- 3/4 cup crumbled Feta cheese
- 3 Tablespoons olive oil
- 3 Tablespoons snipped fresh dill sprigs
- juice and zest of 1 large lemon
- sea salt and black pepper to taste
Preparation
Step 1
Mix all ingredients together. Good companion for artisan lettuce. Keeps well for several days in the frig if well-covered.
