Penne with Sun Dried Tomatoes

Ingredients

  • 1/4 lb thinly sliced pancetta - finely chopped
  • 1 tbs olive oil
  • 1 med onion - finely chopped
  • 3 lg garlic cloves - minced
  • 2/3 cup heavy cream
  • 1/2 c drained sun-dried tomatoes - finely chopped
  • 5 oz baby arugula (8 cups) chopped
  • 1 lb penne
  • 1/2 c parm cheese
  • 1/4 c basil
  • S/P

Preparation

Step 1

Cook pancetta in oil in skillet 6 - 10 minutes

leave 2 tbs of fat in pan, add onions, garlic, salt, pepper stirring until

onions are lightly browned 8 min

stir in cream, sun-dried tomatoes, pancetta - simmer until thickened 2-3 min

remove from heat - add arugula and stir

cook penne - reserve 1 cup of water

add pasta and 1/2 c parm cheese to skillet and pass

thin sauce with reserved cooking water
stir in basil
