You might want to double the recipe when you make this "duck sauce" to go with the Shrimp Spring Rolls because it is delicious spread on grilled chicken or pork, as a glaze for cooked carrots, or by golly, even served with duck.

- 1/4 c. rice vinegar
- 2 tblsp water
- 1 tsp finely grated fresh ginger.

In a small bowl, mix together the jam, vinegar, water, and ginger to combine. Make the dip up to a week ahead and store in an irtight container in refrigerator.
