Ingredients
- Marinade: 6 garlic cloves, 1 med onion, 1 C fresh lime juice, 1/2 C rum
- Boneless skinless chicken
- cumin
- oregano
- oil for frying
- salt & pepper
- 1 egg beaten with 2 T water

Step 1
Mix marinade in non reactive (non metal) bowl. Add chicken and marinate for 2-3 hours. Heat oil in skillet. Mix the flour, salt & pepper and place in shallow bowl. Dip chicken in egg wash and dredge in the flour. Fry the chicken pieces in small batches. Cook till 165.
