Ingredients
- 2 eggs
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 cup grated zucchini(1 1/2 pounds zucchine)
- 1 cup all-purpose flour
- 1 heaping teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/8 teaspoon baking powder
- 3/4 cup chopped walnuts, divided
- 1/4 cup dried cranberries

Makes 38 mini muffins or apx. 18 regular sized muffins.
Preheat oven to 350 degrees F.
In a large bowl, stir together eggs, sugar, oil, zucchini. Add flour, cinnamon, vanilla extract, salt, baking powder and 1/2 cup chopped walnuts.
Drop into muffins pans.
Top each muffin with the reserved walnuts and 3-4 dried cranberries.
Bake 15 minutes or until the tops of the muffins are lightly browned.
Cool on rack.
