Ingredients
- To serve and garnish:
- 1 quart cooked orzo pasta
- 1 cup diced tomato
- 1 1/2 diced cucumber
- 2 tbsp finely chopped mint
- 1/2 cup chopped parsley
- 2 oz fresh zesty dressing
- 1 tsp salt
- 1 tbsp fresh lemon juice
- 4 oz spring salad mix
- 1/2 oz crumpled feta cheese
- Kalamata olives and cherry tomatoes for garnish.

Preparation
Step 1
Combine all ingredients except greens, feta, Kalamata olives and cherry tomatoes in a stainless steel bowl and combine. Plate over mixed greens and garnish with feta, olives and cherry tomatoes.
