Ingredients
- For Marinade:
- vegetable oil
- red wine vinegar (can substitute with white vinegar)
- lime juice
- water
- fresh garlic - crushed
- ground cumin
- chili powder
- Mexican oregano
- cilantro, chopped (no stems)
- salt & pepper
- 1 lb steak
- Roasted Tomato Salsa:
- 6 Roma Tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 chipotle peppers
- cilantro, chopped

Step 1
Beef & Marinade:
Combine all ingredients in a large bowl and whisk to combine.
To use with beef, place beef in gallon sized freezer bag or in the bottom of a shallow baking dish Pour carne asada marinade on top of beef, cover dish or close bag, and marinate for at least 1 hour (more is better) before grilling.
Grill red and anaheim peppers.
Salsa:
Preheat oven to 350 degrees. Halve tomatoes, place on oiled baking sheet. Season with salt. Roast for 1 hour and 15 minutes.
Sweat onions and garlic in pan.
Add tomatoes, onion, garlic, cilantro and chipotle peppers in blender. Blend, season and serve.
Place Carne Asada in Flour tortilla and top with salsa, guacamole and grilled peppers.
