Bacon and Mushroom Spaetzle 1 Picture

Ingredients

  • 5 slices of bacon, sliced thin
  • 2 cups of sliced crimini mushrooms
  • 1 tablespoon of olive oil
  • 2 shallots, minced
  • 1 clove of garlic, minced
  • 1/3 cup dry white wine
  • 1 and 1/2 cup of heavy cream
  • Salt and freshly ground black pepper
  • 2 ounces grated Gruyere cheese

Preparation

Step 1

In a small pot on medium-high heat, add olive oil, garlic, shallots, bacon and sauté until bacon caramelizes, 5-7 minutes making sure to stir occasionally.
Add mushrooms and cook until soft.
Add wine, stir and simmer until liquid in the pot is reduced by half.
Add cream, bring to a simmer again and reduce heat to medium, simmer for 2 minutes, stirring occasionally.

Once sauce is completed, season with salt and pepper and reserve for spaetzle assembly.

To assemble:
Combine spaetzle and sauce in a skillet and cook on medium-high heat until liquid is boiling. Transfer in an oven safe baking dish, place on a small cookie sheet and top with grated Gruyere cheese, bake at 350 degrees for 25 minutes and then
broil an additional 2-3 minutes until cheese is golden brown in color.
Let stand 5 minutes before serving.
