Ingredients

  • 6 egg whites
  • 3 eggs
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1 onion, chopped
  • 1/4 C red pepper chopped
  • 2 turkey bacon strips, cooked and crumbled (or 4 strips precooked bacon, crumbled)
  • 1 T olive oil
  • 1 C fresh baby spinach
  • 3 T thinly sliced fresh basil leaves
  • 1/2 C shredded mozarella

Preparation

Step 1

- Whisk first 6 ingredients together and set aside
- In an 8 inch ovenproof skillet, saute onion and pepper in oil until tender; reduce heat; top with spinach
- Pour egg mixture over top. As eggs set, push cooked eggs to the middle , letting uncooked portion flow underneath until eggs are nearly set; sprinkle with cheese and basil
- Broil 3 - 4 in from heat for 2-3 min. until eggs completely set and cheese is melted; let stand for 5 min.
